It's that time again.....another Friday Random Recipe. In light of the job news, I must admit, I am not feeling very festive and upbeat. So I'm counting on all your yummy recipes to make me feel better!
This week the challenge was to post any recipe you would like to share. No theme, just whatever you want to share.
I again do not have a picture for you. Sorry! This was even on the menu this week, but I didn't get to make it yet and so....no picture.
Mac and Cheese
1 box of macaroni noodles (or whatever noodle you like)
1 lb Velveeta
1 cup milk
salt and pepper to taste
Preheat oven to 350ยบ. Cook noodles according to package directions. While noodles are cooking, cut Velveeta into small cubes. Place cooked noodles, Velveeta cubes, and milk into a 2-qt baking dish. (I have used round and rectangle shaped dishes.....whatever you prefer works). Mix it all well. Bake in over for 20 minutes. Stir well. If needed, place back in oven for a few more minutes until cheese is all melted and creamy. (You can add more milk if needed or to get it to your desired consistency).
One thing I like about this recipe is that you can add other things to it. Ashlyn loves hot dogs so I have cut up hot dogs and mixed those in. I have made it with cut up ham as well. You can add peppers or whatever yummy goodies you would like.

Great choice for your recipe. I love recipes like that where I can add whatever we are in the mood for. If you like tuna that's another thing you could try with this one.

Oh I'm such a doofus . . . I forgot my recipe at home! But, I'm going to post it tonight when I get home from work . . . so check back . . . it'll be worth it . . . the best margarita ever ;-) Definitely necessary with Cinco de Mayo coming up ;-)

Not only am I a doofus, I'm a big fat liar! I did not post a margarita recipe (read my post to find out why), but I did post something yummy - and I think I made the Friday deadline by 45 minutes :-)
SO that was a short break! I just got caught up on all your happenings and I'm sorry for all the sickness and the job thing. Just keep looking for the right spot, we're doing the same. It's gotta get better someday... I'll see if I can find a nice recipe for you. :)
